Dubai Hotels 101: A MUST READ!

There are basically 2 parts of Dubai: "old and new"
Old Dubai is the area located around the Dubai Creek, the souks (=bazaars) and extending to the areas called "Bur Dubai", "Mankhool" and "Karama" as well as the beginning of Sheikh Zayed Road (near Dubai World Trade Centre).

Then there are all of the new developments further outside of town. This is where Dubai Marina is being built, and where all the 5-star beach hotels are located. This area is also nice, but if you want to see a lot of what Dubai has to offer, you really should stay in the "older" part. Dubai's traffic is extremely bad, so I recommend that you stay close to places of interest, otherwise you could spend hours in traffic jams...
